Ripe stone fruit meshed with a background of roasted hazelnuts, almonds and a hint of grilled peaches. Grapefruit and ripe citrus adding depth to the complex yeast lees nougat characters. The palate is abundant with ripe nectarines all held together with a fine line of juicy acidity, providing outstanding length and persistence.

Grilled Australian Scampi w` Tarragon Butter ingredients:
• 12 large scampi, butterflied, wipe clean and deveined, don’t wash • 1/2 cup unsalted butter, softened • 2 bunches picked fresh tarragon leaves, finely chopped • zest of 1 lemon
instructions:
- prepare the tarragon butter: whip butter until fluffy and white. Add chopped tarragon, lemon zest, salt, and pepper. mix until well combined. Put butter into a piping bag or just use the back of a wooden spoon.
- Lay scampi shell side down on a baking tray covered with foil for easier washing up. Spread a generous amount of tarragon butter on each, place under a hot grill for 4-6 minutes depending on the size of the scampi, do not brown, cook until meat is just translucent and butter is melted.
- Arrange scampi in a hot bowl plate, drizzle any leftover butter then add a good zest of fresh lemon, and a small grind of black pepper. Serve with Crusty baguette to mop up the delicious butter and don’t forget the finger bowls.
